If your Instacart shopper delivers you extra ripe avocado, what do you do? I like my avocados to be perfectly ripe – not more, not less. But during this shelter-in-place, I am totally relying on Instacart to deliver groceries and of-course the Instacart shopper is unaware of my obsession with the perfection of the ripeness of the avocado. As a result I ended up with 10 large extra ripe avocados and wondering the best usage for it. Finally I landed with this Avocado paratha recipe that is full of health and everybody in my family relished it.

How to make Avocado Parathas
To make this Avocado paratha you need two large ripe Avocados, 2 cups of whole wheat flour, 2 cups of all-purpose flour, 3 eggs, diced onion, green pepper, red pepper, cilantro, green chilis (optional) 1 tablespoon salt, and 1 tablespoon sugar. Mix all the ingredients together to make the dough, roll the parathas, and shallow fry the parathas. Enjoy it with yogurt, pickles, onion and green chilies
Note that the dough might be soft and difficult to handle. I used oil in my palm to create separate balls before rolling the parathas using a rolling pin and while rolling them I used a plenty of flour so that it does not stick to the surface.
In order to make this recipe Keto friendly, you can also use almond flour.

Ingredients
- 2 big overripe avocados
- 2 cups of all purpose flour
- 2 cups of whole wheat flour
- 3 egg
- 1/4 cups of dices onion
- 1/4 cups of dices red and green pepper
- 1/4 cups of cilantro
- 2 green chillies (dices)
- 1 tbsp of salt
- 1 tbsp of sugar
- 2 tsp of chaat masala
Instructions
- Mash the avocados
- Beat the eggs in a separate bowl
- Now mix all the ingredients together and knead the dough for 10 minutes
- Put little bit of oil in your palm and separate out small balls of dough to make the individual parathas. I could make 15 medium size balls out of the dough
- Now roll each of the dough with rolling pin. Use loose flour while rolling the dough
- Heat 1 teaspoon of oil in the pan and individually fry the parathas
- Serve the parathas with Yogurt, Achar, Onion and green chili
