Holud Pulao (Yellow Pulao) is a traditional Bengali pulao which is served with meat or fish or egg curry. Traditionally this pulao is little sweet, but I just add a hint of sweetness, so it cannot be really called sweet pulao. My mom used to make the Holud Pulao in special occasions with lots of care. However, in our busy lives I found a great hack for making Holud Pulao (Yellow Pulao) using Instant Pot in 15 minutes.
To make this pulao in Instant Pot, you need Basmati rice, ghee, turmeric, roasted cashew, raisin, cloves, cinnamon, salt and sugar. Turn on the instant pot in saute mode, and add ghee. Then add the cinnamon stick, the cloves and sauté it. Then add the washed basmati rice, turmeric and sauté it. Then add water with 1: 1.25 proportion with the rice. However, I added a little more water to make the rice softer ( 4 cups of water for 3 cups of rice). Add salt sugar, raisin and close the instant pot lid. Now put the instant pot in manual high pressure mode for 4 minutes. After 4 minutes, the rice will be done. Let the instant pot sit for another 5 minutes in warm setting, then let the steam out of the pot. Now open the Instant pot, add the roasted cashew and additional salt/ sugar as per taste.

Ingredients
- 3 cups of Basmati Rice
- 3 tbsp ghee
- 1 tsp cloves
- 1 cinnamon stick
- 1/2 tsp Turmeric Powder
- 3 tbsp raisins
- 3 tbsp Cashews
- 3 tsp sugar
- 11/2 tsp salt
- 4 cups of water
Instructions
- Wash the Basmati Rice
- Turn on the instant pot in sauté mode, and add ghee.
- Add the cinnamon stick, the cloves and sauté it.
- Add the washed basmati rice, turmeric and sauté it.
- Add water
- Add salt sugar, raisin and close the instant pot lid
- Put the instant pot in manual high pressure mode for 4 minutes
- While the rice is cooking in the instant pot, roast the cashew in a frying pan using a little bit of oil or ghee
- After 4 minutes, the rice will be done. Let the instant pot sit for another 5 minutes in warm setting, then let the steam out of the instant pot.
- Open the Instant pot, add the roasted cashew and additional salt/ sugar as per taste.
