It is the holiday season and of course I am cooking all the time. In a diabetic family, it is always a struggle to find a dessert with low sugar. I think I found the perfect dessert for this holiday season, the chocolate mousse, made with only 4 ingredients.
I work in a high pressure, fast moving Bay Area Tech company. So with my high pressure job, kids and family obligations I barely get time sleep, let alone blogging. However, my company provides a week long break during Thanksgiving and Christmas. So this is the happiest time of the year for me and it is the time to get back to the things I love – cooking and blogging! So I am all up for holiday cooking.
My family loves chocolate desserts. Me and my husband had sweet memory of eating Chocolate Mousse in the small town Bhubaneshwar, India, where I used to live for my first corporate job. I always wanted to make that tasty Chocolate Mousse and today I can say that I have successfully done so.
This chocolate mousse recipe requires only 4 ingredients and it is so easy to make that my 9 year old son was my obvious su chef. The recipe requires 2 eggs, 1/4 cup of sugar, 2and 1/2 cups of heavy whipping cream and 6 oz of semi sweetened chocolate chip.
First you need to whisk the egg and the sugar for approximately 2 minute. Then heat the part of the heavy whipping cream in the stove, but do not boil it. Pour the hot heavy whipping cream in the egg mixture and mix it well. Now pour the egg/ whipping cream mixture back into saucepan and heat it in low or medium heat, continuously stirring for 5 min or until the mixture thickens up. Now add the chocolate chips and mix it well until it is all melted. Now keep the chocolate mixture in the refrigerator for 2 hours.
In the mean time whisk the rest of the heavy whipping cream until it forms stiff peaks. After 2 hrs, when the chocolate mixture cools down, fold in the whipped cream. The mousse is now ready. Cool it in the refrigerator and serve it with dark chocolate chip.
