Apple Strudel, one of the few German foods that I really like. At this time of the year, our backyard is overflowing with the Granny Smith Apples. So I am trying to make every possible desserts with apples and nothing can be better than Apple Strudel made at home
I have visited Germany and Austria for work in the past and of course ventured German food as much as possible. But honestly, I am fond of only a handful of German foods and off course Apple Strudel is at the top of the list. So here is my best attempt to make Apple Strudel with our backyard bounties and it came out exceptionally good. So documenting the recipe and sharing it.
Step 1: Cook the apples
To make the Apple Strudel, first make the apple filling and cool it down. To make the apple filling, peel and cut the apples, add sugar, water, butter, kosher salt, ground cinnamon and cook it for 10 -15 min, until the apple is soft. Now keep the cooked apple aside and let it cool down
Step 2: Make the puff pastry ready
Take 2 sheets of puff pastries and place it on a lightly floured surface. Now using a rolling pin, expand the sheets by 15%. Add the cooked apples on the middle one third of the puff pastry sheet. Cut horizontal pieces on the side one thirds of the puff pastry sheets. Roll the cut pieces over the apple to cover the entire apple filling. Brush a beaten egg on top of the pastries.
Step 3: Bake the Pastries
Heat oven at 375 degree F and heat the pastries for 40 minutes
Step 4: Glaze the pastries
Melt 4 tbsp butter in microwave. Now add vanilla, confectioner sugar, pinch of salt and milk and heat the mixture on the stove top until the sugar melts. Now add the glaze over the baked pastries and serve.

Ingredients
- 5 medium size Granny Smith Apples
- 1/2 cup sugar
- 1/3 tsp kosher salt
- 1 tsp ground cinnamon
- 1/4 cup water
- 1 tbsp butter
- 2 sheets of puff pastry
- 1 egg
- 1/4 tbsp butter
- 1 tsp vanilla
- 1/4 tsp kosher sale
- 1 cup confectioner sugar
- 3 tbsp milk
Instructions
- Peel the skin and cut into small pieces
- In a saucepan add the apples, water, butter, sugar, salt, ground cinnamon and cook it for 10 to 15 minutes, until the apple is soft
- Keep the cooked apples aside to cool down
- Preheat oven to 375 degree F
- In a lightly floured surface, take 2 sheets of puff pasty and expand them by 15 percent using a rolling pin
- Once the cooked apples cool down, add the apples in the middle one third of the puff pastry sheets
- Cut the 2 sides the puff pastry sheets in horizontal cuts
- Now roll both sides alternatively to cover the apple filling
- Grease a baking sheet and transfer the pastries on the baking sheet
- Brush the beaten egg over the pastries
- As the over heats up, bake the pastries for 40 min.
- Melt 4 tbsp of butter in microwave
- On top of the stove, add the butter, vanilla, milk and confectioners sugar in a steel bowl. and heat it uo until the sugar melts
- Spread the mixture on top of the Apple Strudels and serve it.
