If you ever travelled in Indian railway, you might have tasted the “poori-sabji” in the railway stations when the train stops at a bigger station. The sabji (veggie) that is served with poori (Indian deep fried small fluffy bread) is usually a very delicious flavorful, but simple potato curry. I got introduced to this delicious street food when I used to travel by Indian Railway quite frequently during my first job was at the city of Bhubaneswar. I used to take an eight hours overnight train ride to come to my hometown Kolkata in the weekend. At 2 AM in the morning, the train used to stop at the station Kharagpur. The poori sabji at Kharagpur station was perfectly delicious for a midnight snack! It was a really crazy idea to eat poori sabji at 2 AM in the morning, but you cannot just miss this mouthwatering food.
In our house, poori sabji was a weekend breakfast item. But in a Bengali house poori used to get replaced by Luchi, which is made out of white flour. This is the Thanksgiving weekend, so it definitely calls for a special breakfast. So this morning I decided to make the Potato Curry – Aloo Sabji for breakfast and served it with parathas. Here is the recipe for the potato curry.

Ingredients
- 6 small potatoes cut in small pieces
- 2 cloves of garlic sliced
- 1 tomato chopped in small pieces
- 1/2 cup of onion sliced in medium pieces
- 1/4 teaspoon of Asafetida
- 1/4 teaspoon of cumin seeds
- 1/4 teaspoon of coriander seeds
- 2 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of cumin powder
- 1/4 teaspoon of Chili powder
Instructions
- Heat one and half tablespoon of oil and add asafetida, cumin seed, coriander seed
- Add the garlic and fry until it turns slightly brown
- Add the onion and fry it until it turns slightly brown
- Add the tomato and fry it for 2 minutes
- Add turmeric powder, coriander powder, cumin powder and chili powder. Cook it until the oil separates out.
- Add the potatoes.
- Add salt to taste. I also add little bit of sugar. But adding sugar is optional.
- Add 1/4 cup of water and cover the pan to let the potato boil.
- Check the potatoes after 5 min. If the potatoes are done, the curry is ready to be served.
