Chinese food from Kolkata created a new genre of cuisine called Indo-Chinese cuisine. It is basically the Chinese food modified to satisfy the Indian spicy taste buds. This Saturday morning I decided to cook fried hakka noodle that is usually available in the street side in Kolkata and other cities in India. Here is a quick recipe for the hakka noodle that can be served for lunch, dinner and frequently I pack it for kids’ lunch.

Ingredients
- 300 grams of Noddle
- 1 cup of Onion slices
- 2 carrots sliced (optional)
- 2 cloves of Garlic sliced
- 1/2 Green pepper (optional)
- 1/2 red pepper (optional)
- 1/2 cup of cabbages sliced (optional)
- 1/2 cup of frozen carrots and peas
- 5 table spoons of Teriyaki sauce (Kikoman)
- 2 table spoons of dark soy sauce (Kikoman)
- 2 table spoons of Ketchups
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 12 pieces of medium size shrimp
Instructions
- Add the noodles in boiled water and cook it for 2 minutes. Drain the water and let the noodle cool down
- Once the noodle cools down, add a teaspoon of oil in the noodle and separate out the strands of the noodle
- Heat oil in a skillet and fry the garlic slices a little bit
- Add sliced carrots and fry it for 2 minutes
- Add onion, green pepper and fry it for another 3 minutes
- Add red pepper, cabbage and fry it for another 2 minutes
- Add the mix of frozen vegetables and cook for another 3 minutes
- Add Teriyaki sauce, Soy Sauce and Ketchup
- Add salt
- In a separate pan add 1/2 teaspoon of oil and lightly fry the shrimps.
- Add the shrimps to the vegetables and cook it for 2 minutes
- Add the noodles in the veggies and mix it up. and fry it in the pan for 2 minutes
- Instead of shrimp, you can use egg. In a separate pan scramble the eggs and fry it.
- Add the fried scrambled egg on top of the noodle.
- Add the black pepper and serve
